Recipe Monday: Mac N Cheese

In the spirit of Thanksgiving this past weekend I decided to share my Mac N Cheese recipe that Ben and I make when we’re in need of comfort food and on the holidays.

The original is here from Rachel Ray and naturally I altered it slightly to my liking.

Mac N Cheese

Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 tablespoons flour
  • 1 1/2 cups skim milk
  • 8 oz package shredded sharp white cheddar cheese (I recommend Cabot)
  • 1/2 teaspoon nutmeg + more to taste
  • 1 pound rotini

Directions

Heat a medium, deep skillet over medium heat. Add oil and butter. When butter melts into the oil, add flour and combine. Gently cook, whisking flour and butter together, until smooth and flour has had a chance to cook, about 3 minutes. Slowly add milk while continuing to whisk. Gently bring milk to a bubble while stirring frequently. Allow the milk to thicken a bit, then stir in shredded cheddar cheese a handful at a time (reserve enough to sprinkle on the top later). Season sauce with nutmeg. Add cooked pasta to sauce and coat completely by turning over and over in the cheese sauce. Transfer to a baking dish and place under a hot broiler until cheese browns.

Also want to wish a very happy birthday to my best friend since 7th grade, Miss Brookie Cookie. We bonded on a school bus over our matching butterfly clips when we were 13 and have been best friends ever since.
